orange salmon

Last weekend we were out at the lake, enjoying the last glorious days of sunshine and warm weather.  It needs to be said that we're not exactly "roughing it" when we're out at the lake.  My in-laws have a gorgeous house with all the amenities of home, including a fully-equipped kitchen.  This time we enjoyed BBQ'd salmon with a lake view before heading home on Sunday night. 

Orange-Salmon Marinade

  • 1/2 cup orange juice
  • 3 tbsp brown sugar
  • 2 tbsp oil
  • 2 tbsp soy sauce
  • 1 tbsp dried onion flakes
  • salt & pepper
  • salmon fillets
  • Orange Butter
  • 1/3 cup butter, softened
  • 1 tbsp honey
  • 1 tbsp fresh parsley
  • 1 tbsp fresh tarragon
  • grated rind of one orange
  • fresh ground black pepper (to taste)

First, pour all the marinade ingredients into a large ziploc bag and mix them all together.  Add the salmon fillets and squeeze out as much air from the bag as possible when you're sealing it.  Allow the salmon to marinate for at least 2 hours before cooking it.

While the salmon is marinating, mix up the orange butter by combining all the ingredients.  Transfer the butter onto a square of plastic wrap, then roll the plastic around the butter and spin the ends (kind-of like making a wrapped candy).  Allow the butter to firm up in the fridge. 

Heat the BBQ to medium and spray the grill before putting the fish on it.  Cook the salmon for about 4 minutes on each side (depending on the thickness of your fillets).  Serve it up with a slice of the orange butter on top.
