easy weeknight dinner: taco salad

Things have been pretty busy around our house these days and when we're rushing out the door to soccer games, the gym, coffee with friends, etc., we need something quick and easy for dinner.  Last week we had taco salad a few nights.  I cooked up some ground beef to serve on top, but you could just as easily cut up a bbq chicken breast or something else.  Chop-up what ever veggies you want, top with a little salsa and sour cream and it's ready.  Super-quick.

Taco Salad

  • mixed green lettuce
  • diced tomato
  • diced peppers
  • thinly sliced red onion
  • chopped cucumber
  • sliced avacado
  • 1 lb. extra lean ground beef (cooked and seasoned with taco seasoning)
  • low fat sour cream
  • salsa
  • taco chips
