easter treats

I love Easter!  First of all, it's a day to celebrate remember the important things in life and spend time with family and friends.  Second, there are lots of sweet treats involved and the colours are so cheerful and pretty!  I didn't have quite enough time to accomplish all the baking I had in mind this week, but I did manage to make a few Easter basket treats to share.  I made some decorated egg cookies and Trevor whipped up a batch of root beer flavoured marshmallows.  I also made some cute mini cupcakes for both of us to share at work (I'll post those later). 

Sugar Cookies

  • 1 1/2 cups butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 tsp vanilla
  • 4 cups flour
  • 2 tsp baking soda
  • 2 tsp cream of tartar
  • 1/2 tsp salt
  • grated zest of one lemon

Cream butter and sugar together in a large bowl.  Mix in the egg and vanilla and continue beating until smooth and creamy.  Mix dry ingredients and lemon zest together in a bowl and gradually add into wet ingredients until combined.  Separate the dough into two rounds and cover with plastic wrap.  Refrigerate the dough for at least one hour before baking.  Roll out the dough to about 1/8" and go crazy with your favorite cookie cutter.  Arrange cookies on cookie sheets covered with parchment paper.  Bake at 350 F for about 10 minutes (the edges should be barely light brown).  Allow the cookies to cool before icing. 

Glaze Icing

  • 1 cup icing sugar
  • 2 tsp milk
  • 2 tsp white corn syrup
  • 1/2 tsp vanilla (I use clear vanilla, or what ever flavour extract you want)
  • food colouring (the Wilton's gel colours work well because they don't thin out the icing and the colours always look nice)

Root Beer Marshmallows

Trevor started making marshmallows last Christmas.  If you've never tried home-made marshmallows you NEED to try this recipe!  They taste sooo good and they're actually easy to make.  Something about the root beer flavour reminds me of childhood and ice cream floats.  It's good to be reminded of childhood at Easter, except that I don't get to hunt for chocolate eggs anymore.  

I picked up the root beer essential oil at Bulk-Barn.  I've been on the lookout for root beer flavouring for a while now...since last November when Whimsical Cake Studio had a "Mo-vember" special with spice cupcake and root beer buttercream...actually, that may be a future experiment for me...
